learn how to make easy vegetarian enchiladas in a pan without oven using basic ingredients from your kitchen.
enchilada sauce:
1 tbsp butter
1 tsp chilli flakes
1 tsp paprika/red chilli powder
1 tbsp tomato sauce
1/2 tsp oregano
2 tomatoes
3 garlic cloves
salt to taste
1 tbsp fresh cream
for stuffing:
2 tbsp refried beans
2 tbsp sweet corn, boiled
1 tbsp coriander leaves/parsley
2 tbsp spring onion whites, thinly sliced
salt to taste
1 tsp red chilli powder
1/4 tsp black pepper powder
2-3 tbsp processed cheese, grated
for tortilla:
1/2 cup yellow maize flour
1/2 cup all purpose flour/maida
2 tbsp oil
salt to taste
1/4 tsp oregano
1/4 tsp chilli flakes
for veg enchiladas recipe:
1 tsp butter
4 tortillas
1/4-1/2 cup processed cheese, grated
1/2 tsp oregano
1/2 tsp paprika/red chilli powder
method:
for tortilla:
– take a mixing bowl and add all the ingredients under tortilla in it.
– add water as required to make soft dough. do not let the dough rest.
– roll out into medium thick circle using some dry flour.
– transfer to a pan and roast on both the sides till half cooked.

– after it cools down, cut tortilla into square shape.
enchilada sauce:
– firstly heat butter in a pan and immediately add chilli flakes, paprika and tomato sauce.
– mix well sauce for a minute.
– now add tomato garlic puree, oregano and salt to taste.
– mix well and let it cook well for 4-5 minutes.
– tomatoes are cooked well and colour changes, turn off the flame and keep aside and let it cool down completely.
– finally, add fresh cream and mix well.
for stuffing:
– take a mixing bowl and add refried beans and boiled sweet corns.
– next add sliced spring onions, salt to taste, red chilli powder, black pepper powder and grated cheese.
– mix well and stuffing is ready.
for enchiladas:
– fill 2 tbsp stuffing in tortillas and fold it.
– prepare rest of the tortilla using the same method.
– now place stuffed tortillas in a pan or a baking dish.
– pour enchilada sauce over it.
– sprinkle grated cheese over it.
– sprinkle some oregano and paprika.
– let it simmer on a very flame flame for 20 minutes or on 250 degrees for 10 minutes.
