Fish and shrimp poached in a creamy sauce, topped with buttery mashed potatoes and melted cheddar. A tasty and economical meal for one or two.
1 cup of prepared basic white sauce
1/2 teaspoon low sodium Old Bay seasoning, or to taste
4 ounces tilapia fillets (or other mild, white fish)
5 medium, raw, peeled, shrimp
1/4 cup each: lima beans, sliced carrots, diced onion, frozen peas, frozen corn
1 cup mashed potatoes (great use for leftover mashed potatoes)
1 tablespoon butter
Melt 1 tablespoon butter in 7-inch skillet over medium heat. Add the fish pieces and the shrimp. Season with 1/4 teaspoon Old Bay, 1/4 teaspoon salt, 1/8 teaspoon pepper. Simmer for 4 minutes over medium heat. Top with the mixed vegetables and cook over low heat for about 5 minutes. Spread the white sauce over the fish and vegetables. Heat through. Spread one cup of mashed potatoes over the sauce. Bake in a preheated oven for 15 minutes. Top with 1/4 cup shredded cheddar cheese and bake for an additional 3 to 4 minutes or just until the cheese melts. Serve with a wedge of lemon. Makes two servings.
