Hey guys! We made some extra delicious pancakes with ube extract! We found the extract at a local Filipino market but you can also order it online. Ube is a purple yam and is used in desserts. It’s so good tastes similar to taro. It’s naturally a deep purple color too!
Also, if you don’t have a gluten intolerance, regular bisquick works too! Hope you guys enjoy!!
-Bisquick pancake mix, we used the gluten free one
-4 drops liquid stevia
-1 teaspoon vanilla extract
-1 teaspoon ube extract
Heat up your non-stick pan with about a teaspoon of vegan butter. Make sure the entire pan is coated. You’ll repeat this step for every pancake.
Mix the bisquick and water or non-dairy milk according to the directions. Add in the rest of the ingredients. Mix well and pour batter (about a 1/4 cup) in the pan and flip when the side facing towards you has bubbles on it.
Drizzle with syrup, eat and enjoy!
